  • 2 medium Yellow Onions, sliced thinly

  • 2 tbsp. Olive Oil or Vegan Butter

  • 1 tsp. Salt

  • 2 lbs. Yukon Gold Potatoes, peeled and cubed

  • 2 tbsp. Vegan Butter

  • 1/3 c. Green Garden Onion Dip

  • 1/3 c. Non-Dairy Full Fat Milk

  • 1 tsp. Salt

  • Pepper, to taste

  • Chopped Chives, for serving


  • Heat a large skillet to medium. Add olive oil and onions. Cook for about 7-10 minutes, stirring often, until the onion start to soften and brown. Stir in salt, then reduce heat to low and cook, stirring occasionally, for 30-40 minutes, until the onions are golden brown and caramelized.
  • Meanwhile, bring water to a boil in a large pot. Add the potatoes and simmer until fork tender, about 20 minutes.
  • Drain and add to a large mixing bowl. Mash well, then stir in vegan butter, Green Garden Onion Dip, milk, salt, and pepper.
  • Top the mashed potatoes with more melted vegan butter, caramelized onions, and chives.
