Salt Pepper, to taste Chopped Chives, for servingDirectionsHeat a large skillet to medium. Add olive oil and onions. Cook for about 7-10 minutes, stirring often, until the onion start to soften and brown. Stir in salt, then reduce heat to low and cook, stirring occasionally, for 30-40 minutes, until the onions are golden brown and caramelized.Meanwhile, bring water to a boil in a large pot. Add the potatoes and simmer until fork tender, about 20 minutes.Drain and add to a large mixing bowl.
