Add mayo, apple cider vinegar, miso, tamari, dijon, garlic powder, and pepper to a bowl and whisk well.
Add the chickpeas to a bowl and stir in celery, carrot, onion, dill pickle relish and dill. Pour in the mayo mixture and stir until everything is well coated.
Assemble sandwiches with lettuce, chickpea salad and a slice of vegan cheese. Leave off top slice of bread and broil for a few minute, until the cheese is melted. Top with bread and enjoy.
