Celery, finely diced1/3 c. Shredded Carrot2 tbsp. Finely Chopped Scallions2 tbsp. Dill Pickle Relish (optional)1 tbsp. Fresh Chopped Dill1/4 cup Green Garden Mayo1 1/2 teaspoon Apple Cider Vinegar2 teaspoons White Miso2 teaspoons low sodium Tamari or Soy Sauce1 1/2 teaspoon Dijon Mustard1/2 teaspoon Garlic Powder1/4 teaspoon Ground Pepper Whole Grain Bread Lettuce Vegan Cheese SlicesDirectionsDrain and rinse chickpeas.Add mayo, apple cider vinegar, miso, tamari, dijon, garlic powder, and pepper to a bowl and whisk well.Add the chickpeas to a bowl and stir in celery, carrot, onion, dill pickle relish and dill. Pour in the mayo mixture and stir until everything is well coated.Assemble sandwiches with lettuce, chickpea salad and a slice of vegan cheese. Leave off top slice of bread and broil for a few minute, until the cheese is melted. Top with bread and enjoy.
