Caramelized Onion Mashed Potatoes

Ingredients

2 medium Yellow Onions, sliced thinly
2 tbsp. Olive Oil or Vegan Butter
1 tsp. Salt
2 lbs. Yukon Gold Potatoes, peeled and cubed
2 tbsp. Vegan Butter
1/3 c. Green Garden Toasted Onion Dip
1/3 c. Non-Dairy Full Fat Milk
1 tsp. Salt
Pepper, to taste
Chopped Chives, for serving

Directions
  1. Heat a large skillet to medium. Add olive oil and onions. Cook for about 7-10 minutes, stirring often, until the onion start to soften and brown. Stir in salt, then reduce heat to low and cook, stirring occasionally, for 30-40 minutes, until the onions are golden brown and caramelized.
  2. Meanwhile, bring water to a boil in a large pot. Add the potatoes and simmer until fork tender, about 20 minutes.
  3. Drain and add to a large mixing bowl. Mash well, then stir in vegan butter, Green Garden Onion Dip, milk, salt, and pepper.
  4. Top the mashed potatoes with more melted vegan butter, caramelized onions, and chives.
