1 15 oz. can Chickpeas, drained and rinsed
1/3 c. Celery, finely diced
1/3 c. Shredded Carrot
2 tbsp. Finely Chopped Scallions
2 tbsp. Dill Pickle Relish (optional)
1 tbsp. Fresh Chopped Dill
1/4 c. Green Garden Mayo
1 1/2 tsp. Apple Cider Vinegar
2 tsp. White Miso
2 tsp. Low Sodium Tamari or Soy Sauce
1 1/2 tsp. Dijon Mustard
1/2 tsp. Garlic Powder
1/4 tsp. Ground Pepper

- Drain and rinse chickpeas.
- Add mayo, apple cider vinegar, miso, tamari, dijon, garlic powder, and pepper to a bowl and whisk well.
- Add the chickpeas to a bowl and stir in celery, carrot, onion, dill pickle relish and dill. Pour in the mayo mixture and stir until everything is well coated.
- Assemble sandwiches with lettuce, chickpea salad and a slice of vegan cheese. Leave off top slice of bread and broil for a few minute, until the cheese is melted. Top with bread and enjoy.
