Sweet Potato Fries with Spicy Garlic Mayo
SERVES 2-4 | FINISH IN 45 MINUTES
3 medium Sweet Potatoes, peeled and cut into 1/4″ strips
2 tbsp. High Heat Oil, such as vegetable or safflower
1 tbsp. Cornstarch
3/4 tsp. Salt
1/4 tsp. Ground Black Pepper
1/4 c. Green Garden Garlic Mayo
1 tbsp. Hot Sauce of choice
- Heat oven to 400° F. Peel and slice sweet potatoes into fries of similar size and width. Add to a bowl and toss with oil. Stir together cornstarch, salt, and pepper, add to potatoes and toss to coat. Line a rimmed baking sheet with parchment paper, add sweet potatoes and bake for 25-30 minutes, tossing every 10 minutes.
- Stir together garlic mayo and hot sauce. Serve fries with dipping sauce.
